Mac n Cheese w/ Ham, Leek and Tomato


Not your typical summertime meal but i had some Cabot Seriously Sharp kicking around that i seriouly needed to mix with pasta. I hope i did the nice people up at Cabotjustice with this. It’s not fancy , but it’s good old fashioned rib stickin good!


1 box macaroni of your choice, cooked al dente ( almost done)
4 T butter
4 T flour
1 leek finely chopped
1/2 sweet onion , finely chopped
1 ham steak, cubed
3 cups milk
2 tomatoes, chopped
4 cups Cabot Seriously Sharp Cheddar Cheese, plus 1/2 cup for top
Salt and pepper to taste
1/2 cup shredded parmesan cheese
1 cup dried bread crumbs
teaspoon paprika
Sautee leeks and onion in butter till soft. add ham chunks. Coat ingredients with flour and sautee for about 3 minutes. Slowly add milk and stir till thickened. add salt, pepper, tomato, and cheese. Remove from heat.
Mix in pasta and stir well.
Pour into a 13 x 9 baking dish. Sprinkle with remaining cheddar and parmesean. Sprinkle with breadcrumbs, paprika and salt and pepper.
Bake at 350 for about 30 minutes or golden on top and bubbling on the sides
