Strawberry Cream Cheese Cobbler

Ya, Found on Pinterest..  The first time I tried it, the batter was a bit runny and the amount of butter was outlandish..  A couple of quick adjustments and this is incredible served with vanilla ice cream....
1/4 cup butter, melted
2 quarts strawberries hulled and washed
1 1/2 cups flour
2 teaspoons baking powder
3/4 cup sugar
1 cup milk
1 lightly beaten egg
1 teaspoon vanilla
4 oz cream cheese
pinch cinnamon
1/4 cup brown sugar
Pour melted butter into 13 x 9 pan. You can actually melt the butter in the pan while the oven is preheating to 350.  Mix together the flour, baking powder, sugar, milk,egg, and vanilla. Pour over melted butter. Place whole strawberries in pan over the batter getting as many as you can in there. Cut the cream cheese into little bits and evenly distribute over the top.   Sprinkle with brown sugar and cinnamon.
Bake for approx 45 minutes OR until golden brown on top.
 This is perfect for upcoming strawberry picking season!

Choco-Strawberry Mousse Puffs


1/2 cup (1 stick) butter
1 cup water
1/2 teaspoon salt
4 eggs, room temp ( i put mine in a bowl with very warm water, much faster)
1 cup flour
Bring butter and water to a boil in medium saucepan.
Add flour in all at once and stir until it begins to pull away from sides and forms a ball in the center of saucepan.
Let cool for 5 minutes.
Beat eggs in one at a time until smooth.
Drop on well greased baking sheet a couple of inches apart, you can either make long or small eclairs or big or small puffs, your choice.
Bake in a preheated 400 degree oven for 30 minutes or until golden brown. Do not overbake!!!
Remove to cooling rack and cool til you can handle, slice open with a serrated knife and remove dough in middle, allow to dry 30 minutes to 1 hour before filling.
~~~Strawberry Mousse~~~~~
1 1/2 cups hulled strawberries, hulled (measure after running through food processor. (it’s about 2 cups whole)
1 pkg strawberry flavored gelatin
1 pint whipping cream, whipped
Bring strawberries to a boil in a saucepan, remove from heat and add the gelatin. Pour into a bowl and let sit till almost set. Carefully fold in whipped cream, refrigerate.
When mousse is set and puffs are completely cool, fill each puff with mixture and drizzle with melted chocolate. ( i melted 3 oz of semi sweet in the microwave, slowly)
With the extra mousse, chocolate and whipped cream, i made myself a Straw-Chocotini, which was sinfilly decatant in itself. it’s just very hard to lick the chocolate off the glass. :)

Strawberry Rhubarb Crisp


3/4 cup white sugar (or 1 cup for a sweeter crisp)
3 tablespoons all-purpose flour
4 cups sliced fresh strawberries
3 cups diced rhubarb
1 1/4 cups all-purpose flour
1 cup packed brown sugar
1 cup butter
1 cup rolled oats
1/4 c. nuts
1 t. cinnamon
1/4 t. nutmeg
Preheat oven to 375 degrees F
In a large bowl, mix white sugar, 3 tablespoons flour, strawberries, and rhubarb. Place the mixture in a greased 9×13 inch baking dish.
Mix 1 1/2 cups flour, brown sugar, nuts, cinnamon, nutmeg, butter, and oats until crumbly. I use 2 butter-knives or my fingers. ( till pea sized pieces) Crumble on top of the rhubarb and strawberry mixture.
Bake 45 minutes in the preheated oven, or until crisp and lightly browned.
