Applewood Smoked Bacon Chicken

~Applewood Smoked Bacon Chicken~
4 ounces sliced Applewood smoked bacon, chopped
1 teaspoon sweet paprika
5 small garlic cloves—3 smashed, 2 minced
Salt and freshly ground pepper
One 4-pound chicken, quartered and wings removed
2 tablespoons extra-virgin olive oil
Blend all in food processor. Carefully lift the skin away from the meat of the chicken. Put bacon mixture underneath, covering as much area as you can.
Drizzle olive oil on top of skin, sprinkle with salt and pepper.
Roast in oven at 450 degrees F. for 10 minutes, turn oven down to 325. A 4 lb. chicken will take 70-75 min. Or until meat thermometer reads 180.
Let sit before slicing.
