1 1/2 tablespoon extra virgin olive oil
1/8 teaspoon salt
1/8 teaspoon black pepper, freshly ground
4 large portabella mushroom caps, stems removed
2 Portuguese crusty rolls
1/4- 1/2 cup monterey jack cheese
lettuce or arugula
Brush each of the mushroom caps with oil, both sides. Sprinkle with salt, pepper and garlic powder. Let sit while you preheat your grill, broiler , or George Foreman Grill ( yes, i used it, i managed to get this one at a yard sale for a $1) Brush grates, if grilling, with oil. Grill mushrooms for 4-6 minutes. Place cheese on top and let melt. Toast rolls if desired, ( believe me , it’s worth it!) Serve with lettuce and or arugula.
