Peanut Butter Cup Cheesecake




My kids and neighbors are VERY happy. This cheesecake is so creamy with little bites of Reese's Peanut Butter Cups, peanut butter filling and a beautiful hard chocolate coating. if you want it a little sweeter, add more sugar. I found it very good with the “not too sweet” filling.
Crust~~
 1 1/2 cups crushed chocolate graham cracker crumbs
 1 Tablespoon sugar
 5 Tablespoons butter, melted
 Mix together in a large springform pan. Lightly press onto bottoms and up the edges. Bake at 400 for 10 minutes. Let cool. Wrap foil around bottom of springform pan and set in a bigger pan with about 1/2 inch water.( this step prevents cracking.)
 Filling~~
 4 8-oz packages of cream cheese
 1 3/4 cups white sugar
 1 cup creamy peanut butter
 5 eggs
 1 cup heavy cream
 1 teaspoon vanilla
 1 bag Reese's Mini Peanut Butter Cups, each cut in quarters, saving a few for top.
 1 bag, 10-oz semi sweet chocolate pieces
 Bring all ingredients to room temp. Beat cream cheese and sugar till well blended. Add peanut butter, vanilla, heavy cream, and eggs. beat well. Add peanut butter cups. Pour filling into crust. bake at 400 for 10 full minutes, then turn down to 325 and bake approximatly 1 hour or until set. Let cool completely. Melt chips in the microwave, stirring every 20 seconds or so. Coat cake with melted chocolate, Refrigerate overnight
