Spinach Lasagna Rolls






Spinach Basil Lasagna Roll ups
12 lasagna noodles, cooked al dente, and drained
15 0z ricotta cheese
1 egg
1 10 oz package fresh spinach, washed, dried and chopped fine, reserving 1/2 cup for top
10 basil leaves, chopped, reserving 4 Tablespoons for top
1-2 garlic cloves, minced
1/2 small sweet onion
28 oz can tomato sauce
1 can diced tomatoes
1 Cup mozzarella cheese
salt and pepper
Preheat oven to 350. Saute onion and garlic in medium saucepan till tender crisp. Add tomato sauce and diced tomatoes. Simmer on low for approximately 5 minutes.
Add about 2 cups of sauce to 13 x 9 baking dish. 
Toss reserved  1/2 cup spinach and 1/4 cup basil in small bowl. Set aside. 
Mix ricotta, egg, spinach, basil, salt, and pepper in a large bowl.
Lay out noodle ( make sure it is dry) and add about 1/2 inch of cheese mixture to the top. Carefully roll up and place in pan. Repeat with the rest of noodles and cheese mixture. Add reserved spinach -basil mixture and a tablespoon of mozzarella to the tops.
Cover and bake for 30 - 40 minutes. 
Drizzle with a bit of extra virgin olive oil before serving if desired.

These are so so pretty! I bought some whole wheat noodles to make some lasagna rolls so hopefully I will make the recipe soon. The downside is the ww noodles just aren't as pretty ! lol
