Fish Tacos w/ Tzatziki Sauce

Don't go all freaky on me about the name of the sauce. It's super simple. Cukes, lemon, yogurt.. I liked this sauce on the tacos because I really don't like the sweet sauces on my fish ( tartar) ICK!!  Do make sure you prepare ahead for the sauce. It is better when it sits longer too.

This was our very first experience with these, and we loved them. :)
I did use capers on top along with some of that pre mixed garden salad.. Goes wonderful with slices of mango.



~~Tzatziki Sauce

  • 1 (16 ounce) container low-fat plain yogurt ( I used greek)
  • 1 cucumber, peeled, seeded, and grated
  • 1 clove garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh dill ( they had called for mint)
  • 1 tablespoon fresh lemon juice
  • salt and pepper to taste

Directions

  1. Line a colander with two layers of cheesecloth and place it over a medium bowl. Place the yogurt on the cheesecloth and cover the colander with plastic wrap. Allow yogurt to drain overnight.
  2. Lay grated cucumber on a plate lined with paper towel; allow to drain 1 to 2 hours.
  3. Combine the drained yogurt, cucumber, garlic, parsley, mint, lemon juice, salt, and pepper in a bowl. Refrigerate for at least 2 hours before serving

* Cooks notes, I strained the yogurt in cheesecloth as well as pureeing the cucumber then wrapping it in cheesecloth to hurry the process*



Fish batter
2 lbs white fish ( select your favorite for frying, I like cod or haddock)

Directions:

    Sift dry ingredients.

    Add water and mix well.
  3. 3
    Use to coat fish or chicken filets.

    Cover the fish completely.
  5. 5
    Deep fry until a nice golden brown.
